(1) 生みそとみそ汁にした場合の官能検査結果はほぼ同じ傾向であったが, 完全には一致せず, 両者で引き立つ香りの違うことが示唆された. (2) みそ汁にした場合, 米みその香気が有意に好まれた.これは本研究のパネルが94%東北出身者であったためであり, みその香気の嗜好には食習慣の影響があると判断された. (3) 米みそでは甘い香りは好ましさの重要な要素であり, これにmaltolと4-hydroxy-2, 5-dimethyl-3 (2H) -furanone が関与していると考えられた.しかし, これら成分は豆みそや特殊な米みそにも共通して存在しており, 米みその嗜好を高める甘い香りには他に寄与する成分が存在するのではないかと推察された. (4) 好まれた米みそにおいては香りのソフトなみそを好ましいとするグループと, 香りの強いみそを好ましいとするグループがあった.この香りの強さには低級脂肪族のアルコール類やエステル類の種類や含量及び3-methylthiopropanolの含量が関与していると考えられた. (5) 豆みそ及び一部豆麹を用いた特殊な米みそには揮発酸の含量が高く, 刺激臭, 酸臭が強いという理由で好まれなかった.
