HEMF (4-Hydroxy-2 (or 5)-ethyl-5 (or 2)-methyl-3 (2H)-furanone) with intense sweet aroma was identified as a flavor component of miso for the first time. Miso suspension added with HEMF was evaluated to have stronger misolike aroma by a sensory test.
